Steve Stafford

Woodturning has been Steve Stafford’s passion for over 35 years. He is award winning wood worker who has exhibited in National and State exhibitions and in Japan and the Germany with the Craft Australia display. He taught Industrial Arts for 37 years and, along with his wife Helen, operated a wood working gallery for 20 years.

The Gallery gave him the opportunity to explore various themes and processes in wood turning. Including a series of whimsical and strange creatures inspired by dinosaurs and mythical beings.

The closure of his Gallery has allowed him to explore new directions in woodwork such as carving of netsuke (Japanese miniature sculptures) and a range of Japanese Knifes with Australian timber handles.

The timber for the handles are selected from figured fiddleback native hardwoods such as desert Acacias – Ringed Gidgee, Mulga or Blackwood, Mango, Red Gum and Jarrah. Close grained burls such as York, Stringy Bark, Red Morrell and Mallee are also used for handles.

Each handle shaped and hand sanding individually, so no two handles will be exactly the same. Although the process is labour intensive, the result is worth the time, as each knife is an individual functional art object.

"Gyu" means cow and "to" means sword. A gyuto knife has a medium width blade for slicing, cutting, and chopping .

Santoku Chef Knife

The word santoku loosely translates as 'three virtues' or 'three uses', a reference to the three cutting tasks the knife performs so well: slicing, dicing, and mincing.
